Swaps, storing and making ahead

Good to know

Swaps

  • No ground lamb? Use all ground beef sirloin instead for a milder flavor.
  • No fresh mint or dill? Use about 1 teaspoon of each dried herb in the tzatziki.

Storing it

Store cooked gyro meat and tzatziki separately in airtight containers in the fridge for 3–4 days. Reheat the meat in a hot oven or under the broiler until steaming hot and crisp.

Making it ahead

The tzatziki sauce can be made up to a day ahead and kept refrigerated until serving.
