Swaps, storing and making ahead
Good to know
Swaps
- No 7 Spice blend? Mix allspice, black pepper, cinnamon, cloves, coriander, cumin and nutmeg as a stand-in.
- No sumac on hand? A little grated lemon zest adds a similar tangy note.
Storing it
Store leftover arayes in an airtight container in the fridge for 3–4 days. Reheat in a pan or oven until steaming hot so the pita crisps again.
Making it ahead
Mix the beef filling up to a day ahead and keep it covered in the fridge; stuff the pitas just before cooking so the bread stays crisp.
