Chef Jon Yao cooks the Taiwanese flavors of his childhood in a seafood-focused tasting menu, drawing on family recipes and San Gabriel Valley meals. It opens with pinpán, cold bites inspired by banquet Lazy Susans. The Row DTLA room has concrete, high ceilings and an open kitchen, and the bar offers a shorter tasting menu.

Kato gives a very modern, minimalist vibe that I loved. I sat at the bar as a walk-in, but I’d recommend making a reservation. I ordered their shaved ice drink with yogurt base and guava, which was delicious and refreshing. I also had the toasted honey garlic bread:a pull-apart garlic bread that was absolutely amazing. Overall it feels like more of an experience than just a quick stop. The service was excellent, and the food looked incredible. That said, the tasting menu leans heavily toward seafood, so it’s definitely a great spot for non-vegetarians and seafood lovers. As a vegetarian, my options were more limited, but everything I had was fantastic.

Overall take: Kato is not “better Chinese food.” It is Chinese/Taiwanese memory translated into a Western tasting-menu operating system. That translation is disciplined, but it does not necessarily deepen the original cuisine. The best course was the sour-cabbage fish: technically excellent fish texture and crisp scale, with clean fermented acidity. But the meal did not produce enough memory points, and the broths - supposedly the backbone of the concept - lacked the depth and layering of top-tier Chinese cuisine. The two savory courses overlapped, especially the sesame oil chicken/quail and roasted duck, and the star anise note was too heavy. Desserts were fine, with the white strawberry being more interesting. Service at the late seating felt tired and impersonal, with slow pacing. Biggest gap between dishes was ~30mins. Their Kato Sauvignon matched really well with the seafood dishes, I’d have that over the pairing program. Overall: strong one-star level, not convincing as two-star, and not a place I need to revisit soon

Kato honestly exceeded expectations. The flavors were rich, balanced, and incredibly refined. The caviar added a luxurious touch without overpowering the dish, and the presentation was absolutely beautiful. Every bite felt carefully crafted and full of flavor. Easily one of the most memorable dining experiences for anyone who loves elegant food and fine details. Definitely a place I’d recommend if you enjoy elegant dining, unique flavors, and beautifully presented food.
