Preheat the oven to 375°F.
In a large skillet, brown the ground beef and drain excess fat. Add the taco seasoning mix and water, then cook for 3-5 minutes, stirring occasionally, until most of the liquid is absorbed.
Open both tubes of crescent roll dough and separate into 16 triangles. Arrange the triangles in a circular pattern on a 13-inch round baking stone or large pizza pan, with wide ends overlapping in the center and points facing outward, creating a sun-like shape with a 5-inch diameter opening in the middle.
Evenly distribute the seasoned ground beef mixture over the wide ends of the triangles. Sprinkle the shredded cheddar cheese on top of the meat.
Carefully bring the outer points of the triangles up and over the filling, tucking them under the wide ends of the dough at the center of the ring. Note that the filling will not be completely covered.
Bake for 20-25 minutes, or until the dough is golden brown.
Remove the taco ring from the oven and immediately top with chopped tomatoes, onions, green chilies, and black olives.
Serve hot with sour cream and salsa on the side.
