Julian Maltby's walk-up Austin cafe cooks around house-nixtamalized corn masa. Come for the masa twinkies, filled with orange buttercream or chocolate ganache, and El Paso–Juárez-style burritos with a single filling, rajas or chile colorado, in half-corn flour tortillas. Atole, a corn-and-coffee drink, is the other specialty.
