This milion dollar soup is creamy, cheesy, rich, and savory, and yet uses convenient rotisserie chicken, and easy canned soups to create the base.

## Ingredients (serves 10)

- 2 tablespoons butter
- ½ onion, chopped
- 2 stalks celery, chopped
- 2 cups diced Yukon Gold potatoes
- 1 can condensed cream of chicken soup
- 1 can Cheddar cheese soup
- 4 cups chicken broth
- 1 tablespoon Cajun seasoning
- 4 cups chopped rotisserie chicken, or more to taste
- 5 strips bacon, cooked and chopped
- ½ cup sour cream
- ½ cup shredded creamy mozzarella cheese
- ¼ cup shredded Cheddar cheese
- cooked and crumbled bacon
- scallions, sliced
- buttery round crackers, such as Ritz®, crushed
- garnish
- salt and freshly ground black pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder

## Steps

1. Melt 2 tablespoons butter in a large pot over medium heat. Add chopped onions and celery and cook until tender, 4 to 5 minutes. Season the vegetables with salt and freshly ground black pepper.
2. Add diced potatoes, cream of chicken soup, Cheddar cheese soup, and chicken broth to the pot. Season the mixture with Cajun seasoning, garlic powder, and onion powder. Simmer for 5 minutes. Then stir in chopped rotisserie chicken and cooked bacon.
3. Reduce heat to low and continue simmering the soup, stirring occasionally, for 15 to 20 minutes. Remove the pot from heat and stir in sour cream and shredded mozzarella cheese until well combined.
4. Serve the soup hot, garnished with additional shredded Cheddar cheese, crumbled bacon, sliced scallions, and crushed Ritz crackers.

## Good to know

### Swaps

- No Yukon Gold potatoes? Russet or red potatoes work fine, just dice them to the same size so they cook evenly.
- No rotisserie chicken? Use about 4 cups of any cooked, shredded or diced chicken you have on hand.
- No Cajun seasoning? A mix of paprika, cayenne, and a pinch of dried thyme can stand in.

### Storing it

Store leftovers in an airtight container in the fridge for 3–4 days. Reheat over low heat, stirring often, until steaming hot, since the soup is dairy-based.

### Making it ahead

Chop the onion, celery, and potatoes, and cook the bacon up to a day ahead, then store covered in the fridge until ready to cook.
