## Ingredients (serves 4)

- 1 tablespoon fish sauce
- Juice of one lime
- 2 tbsp soy sauce
- 1 tsp palm or brown sugar
- 1 lb boneless beef steak (such as rib eye, strip, or flank steak)

## Steps

1. Whisk together the marinade ingredients in a medium bowl
2. Add the steak and set aside for 30-45 minutes, turning occasionally
3. Set your grill to high heat, or use your oven at 450 degrees Fahrenheit (232 degrees Celsius)
4. Once hot, grill for 4-5 minutes per side, or until it is caramelized, golden brown, and done to your liking. If preparing in the oven, cook on a lightly greased roasting rack over a drip pan
5. Let rest for 5 minutes
6. Carve against the grain into thick strips and serve with Sweet and Spicy Thai Relish

## Good to know

### Storing it

Store leftover sliced steak in an airtight container in the fridge for 3–4 days. Eat it cold or reheat briefly in a hot pan until steaming.

### Making it ahead

Mix the marinade up to a day ahead and keep it covered in the fridge; add the steak 30–45 minutes before grilling.
