This blooming onion is double-coated, then deep-fried until golden brown and delicious. The dipping sauce recipe is also included.

## Ingredients (serves 4)

- DIPPING SAUCE: 0.5 cup mayonnaise
- 2 tablespoons cream-style horseradish sauce
- 2¼ teaspoons ketchup
- ¼ teaspoon paprika
- BLOOMING ONION: 1 cup milk
- 1 egg
- 1 cup all-purpose flour
- ¼ teaspoon dried oregano
- 2 quarts vegetable oil for deep-frying
- 1 large onion
- ¼ teaspoon salt
- 1 pinch ground black pepper
- 1 pinch cayenne pepper
- 1½ teaspoons salt
- 1½ teaspoons cayenne pepper
- ½ teaspoon ground black pepper
- ½ teaspoon garlic powder
- ¼ teaspoon dried thyme
- 0.1 teaspoon ground cumin

## Steps

1. Gather all ingredients for the blooming onion and dipping sauce
2. In a small bowl, whisk together mayonnaise, horseradish sauce, ketchup, paprika, salt, black pepper, and cayenne pepper
3. Refrigerate the dipping sauce until ready to serve
4. In a large bowl, beat milk and egg until well combined, creating a smooth milk mixture for dipping the onion
5. In a separate bowl, mix flour, salt, cayenne pepper, black pepper, garlic powder, thyme, oregano, and cumin to create the seasoned flour coating
6. Trim 3/4 to 1 inch off the top and bottom of the onion and remove the skin
7. Carefully cut out the 1-inch diameter core from the middle of the onion
8. Using a large, sharp knife, slice down the center of the onion about 3/4 of the way down
9. Turn the onion 90 degrees and slice again to create the initial quartered sections
10. Continue slicing each section in half, working carefully to ensure you do not cut completely through the bottom of the onion, creating approximately 16 even sections or 'petals'
11. Gently spread the onion petals apart
12. Carefully dip the entire onion into the milk mixture, then thoroughly coat with the seasoned flour mixture
13. Separate the petals again and sprinkle additional flour mixture between each petal, ensuring even coating
14. Dip the onion once more into the milk mixture, then coat again with the flour mixture
15. Place the battered onion in the refrigerator for at least 15 minutes to set the coating
16. Pour enough vegetable oil into a deep fryer or large pot to fully cover the onion
17. Heat oil to 350 degrees F (175 degrees C)
18. Carefully place the onion right-side-up in the hot oil and fry until golden brown
19. Drain on a wire rack or paper towels, and serve warm with the prepared dipping sauce in the center

## Good to know

### Swaps

- No cream-style horseradish sauce? Mix prepared horseradish with a bit of mayonnaise to approximate the creamy texture.
- No cayenne pepper? Hot paprika gives the coating a similar warmth.

### Making it ahead

The dipping sauce can be made up to 2 days ahead and kept in the fridge.
