## Good to know

### Swaps

- No Honeycrisp apple? Use another firm, slightly sweet apple like Gala or Fuji.
- No Gruyère? Swap in an equal amount of shredded Swiss cheese.
- No prosciutto? Use thinly sliced pancetta or bacon, cooked until crispy.

### Storing it

Store leftovers in an airtight container in the fridge for up to 3 days and reheat gently on the stove or in the oven until steaming hot.

### Making it ahead

The chicken can be dredged and the onions caramelized up to a day ahead, then kept covered in the fridge until ready to finish cooking.
